Imagine a mold and a cookie cutter had a torrid affair...and you'd have the Onlay. Simply roll out a sheet of fondant, lay it over the Onlay, roll over it with a rolling pin to cut the pattern, then wet the fondant while it is still in the Onlay. Remove the negative-space pieces of the pattern, then lift the whole Onlay, and wrap the pattern onto the side of a cake. The pieces stick to the cake, and are perfectly spaced in the process. Now that's Genius!
