He's here, and he's Scary Awesome!! Meet Chad...You're gonna' love him. But first, let's have a little rant time, shall we?
The Dummy Cake.
Yep, sometimes, you just gotta frost you some styro! Matter of fact, all of the cakes that the ECG has brought to magazine shoots and trade shows over the years have been dummy cakes. So if you've ever done any cakey competitions, shows, or display cakes for your bakery, you know that while the styrofoam dummy is a great tool to have at your disposal, it is NOT AT ALL LIKE FROSTING A REAL CAKE!
Nope, not even close! In the ECG's experience, it's more difficult! The damn things weigh all of an ounce, and the second you touch them, they slide off of the turntable, or tip over. The ECG has tried everything from tape, to non-slip mats, royal icing, even toupee adhesive strips, to hold her dummies in place for frosting. And nothing kept her dummies from tipping or popping off while frosting them.
In a moment of sheer desperation, she's embarrassed to say, that she grabbed a fork, and just stabbed the dummy she was frosting. It gave her a handle (and way more satisfaction than it should have) but now she had to finish frosting the tier with one hand, while the other held the fork. Not to mention, the conspicuous fork pattern left in the top of the dummy that had to be covered with gum paste flowers. Not Ideal. But it did give her an idea! And so was born... Chad the Impaler!

You're gonna love our boy Chad! Not quite as vicious as his great grand dad, Vlad, unless you happen to be a styrofoam dummy! He's made out of heavy Food Grade Stainless Steel for stability, with three Stainless stakes will hold your cake dummies in place while you decorate.
After you're done, the dummy lifts off the spikes and you're onto your next styro victim! Comes with a non skid pad to keep Chad firmly in place on any turntable or work surface. His Spikes are spaced so that he'll hold a dummy as small as 4" He's got a diameter of 12", about the size of a standard decorating turntable. Gotta' make some big dummies? Check out Chad's brother, Big Chad for more work surface! He's got a 16" diameter so your 12" and larger dummies aren't hanging over the edge.

Buttercream and Ganache transform with a few spins on the turntable.

CAKE TIERS OF ANY DIAMETER! But don't worry! Your cakes don't need to be 4" or 6" tall.
For a 5" tier, simply set the tier on a 1" tall footed cake plate. For smaller adjustments, the Evil One
uses her Tougher than Hell 1/4" acrylic plates to adjust the cake height so that there is about a quarter
inch of frosting on the top of the finished cake. Don't sweat it...it's all covered in the photo tutorial
