INTRODUCING THE CHUMPAPPLE PIECAKEN
The ECG loves her some Holiday Baking, but let's face it...it is a season of Pies. And, while she adores pies of all kinds, pie crusts are her kryptonite. She can make a crust. And with her Pie Top Stencils and pie crust cutters, she can make it beautiful. But, her overworking and over-decorating leaves her crusts damn-near the consistency of shoe-leather.
Hey, we can't do it all...
So she decided to focus on her strengths this year. She has an amazing Cheesecake recipe, and a recipe for Pumpkin Cheesecake in the NY Times got her excited...until she opened the recipe to find that it was just a cheesecake with pumpkin and spices added. Nope. She wanted Cheesecake AND Pumpkin Pie. Together. But not THAT together. So she retreated to her Evil Kitchen Lair and began scheming. Happily, the bake times were similar for both her cheesecake recipe and pumpkin pie (according to the label on the back of the Libby's can, anyway.) The Cheesecake batter is also significantly denser than the Pumpkin Pie batter, so there was a chance that her plan could work. Emboldened by this discovery, she decided to incorporate her second favorite Holiday Recipe (Apple Pie) into the mix as well. And so was born the Frankenstein of Fall Flavors...the triple layer, party-in-your-mouth, ChumpApple Piecaken!
She tested this recipe for the first time yesterday, and although it looks very much like a Thanksgiving dessert, it will be making an encore this Christmas. And probably a couple of times in between. So get out your Springform Pan, and get on it!
**UPDATE** Since publishing this post, the Chumpapple Piecaken has become the most requested recipe at the ECG's Lair. Test one out for yourself, and add it to your fall cake/pie/whatever-it-is menu. You'll have an instant hit on your hands.
RECIPE NOTE: In making these bad boys over and over again, the ECG has discovered that when adding the Pumpkin Pie batter to the pan, it is important to gently spoon the batter over the cheese cake batter to avoid marbling of the two batters. It's still stupidly delicious when the two batters mix, but it doesn't have that theatrical layered look that she loves so much!
